Method:
1. Water blanche scallops till half done, set aside.
2. Cook potatoes in water till well done. Peel and mash.
3. Grind Parmesan cheese, combine with mashed potato.
4. Divide potato mash into 5 equal portions, place a scallop in the centre and roll to form patties.
