Ingredients:
6pcs Egg (small size)
160g Lancelet (tiny)
2stalk Spring Onion
1tbsp Bell Pepper (minced)
3tbsp Olive Oil
Seasoning:
11/2tbsp Soya Sauce
1tsp Sugar
a little sesame oil
pinch of pepper
Marinate for Lancelet:
1/2tsp Salt
pinch of pepper
Method:
1. Crack eggs in a bowl, set aside.
2. Marinate lancelet for a while, briefly cook in boiling water. Dish up and drain.
3. Add 3 tbsp of olive oil to wok, heat wok, add in eggs, cover wok and cook over medium heat for a while.
4. Remove lid, add cooked lancelet, spring onion and bell pepper.
