<u>INGREDIENTS</u>
# 400g grey mullet fish
# 30g ginger (shredded)
# 1/4 cup Essence of chicken
# 1 stalk coriander (chopped)
<u>SEASONING</u>
# 1/2 tsp fish sauce
# 1/4 tsp sugar
# 1/2 tsp sesame oil
# 1/2 tsp Shaoxing wine
# 1/2 tsp light soy sauce

METHOD</u>
1. Rinse the grey mullet fish, drain well. Arrange on the serving plate.
2. Mix well the chicken essence with the seasoning mixture, pour over to the grey mullet fish. Top with shredded ginger.
3. Steam in a preheated steamer for about 3 minutes. Dish up, sprinkle with chopped coriander. Serve hot.
