鹹蛋黃沙豬肉(Fried Pork with Salted Egg Yolk)
<u>材料A:</u>
鹹蛋黃......3粒(蒸熟)
牛油......2湯匙
<u>醃肉料:</u>
粟粉......4湯匙
雞蛋......1個
醬油......1茶匙
鹽......1/4 茶匙
糖......1/4 茶匙
<u>材料B:</u>
五花肉(帶皮)......500公克(切成小片)
食油......半鍋(煎炸用途)
<u>烹飪過程:</u>
01.燒開鍋後,放入油,待熱。將豬肉片,慢慢置入,煎炸成金黃色,待用。
02.將鹹蛋黃攪碎,待用。
03.燒開鍋後,轉小火放入牛油,煮溶。倒入鹹蛋黃拌炒,之後加入炸豬肉片,攪拌均勻,即可。
<u>Ingredient A:</u>
500g pork belly, sliced
half a wok of cooking oil, for deep-frying purposes
<u>Pork Marinade:</u>
4 tbsps corn flour
1 egg
1 tsp light soy sauce
1/4 tsp salt
1/4 tsp sugar
<u>Ingredient B:</u>
3 salted egg yolks, steamed
2 tbsps butter
<u>Method:</u>
1. Heat the wok, add oil and wait for the temperature to rise. Put the marinated sliced pork in slowly and fry until golden brown. Set aside for later use.
2. Crush the salted egg yolk, set aside.
3. Heat the wok, switch to small flame and melt butter. Stir in the salted egg yolk, add the fried sliced pork prepared earlier. Stir-fry to mix well and dish out to serve. |
