《我的廚房小心機 》 乾煸四季豆

這道料理的傳統作法，是以油炸逼出四季豆的水份，使四季豆吃起來酥軟、乾香，若不油炸則需以小火慢慢煸炒至水分收乾為止，耗時又浪費瓦斯；這回試用「飛利浦氣炸鍋」，剛好可利用它來取代傳統的油炸作法，本以為烘炸過的四季豆會又乾又焦，沒想到前後花不到15分鐘，這盤只用了50g絞肉油脂和不到10cc葡萄籽油的《乾煸四季豆》，竟也能達到鹹香酥軟的口感。
食材

• 四季豆300g
  
• 絞肉50g
  
• 蝦米1小匙
  
• 蒜末1小匙
  
• 薑末1小匙
  
• 蔥末適量
  
• 
  
  調味料
  
  • 葡萄籽油　適量
    
  • 泡蝦米的水　少許
    
  • 醬油　　1大匙
    
  • 糖　1/2小匙
    
  • 米酒　1小匙

作法

1.
四季豆摘去頭尾及粗纖維、洗淨瀝乾，裝進食物保鮮袋裡，並倒入少許葡萄籽油搓揉數次，使油品均勻附著於四季豆表面，蝦米略為沖洗、加水泡軟後切末。   

2.
先將飛利浦氣炸鍋以200度預熱3分鐘。   

3.
將四季豆放入炸籃內，以200度，炸約8分鐘。（因為要炸到外皮微皺，所以需要的時間較長，若只是要炸熟，約只需5分鐘）   

4.
約4~5分鐘左右時取出查看並稍微翻動、搖晃一下，使四季豆受熱均勻。   

5.
炸至外皮微皺即可。   

6.
取一平底鍋，乾鍋先將絞肉煸炒出油，再加入蝦米、蒜末、薑末炒香，放入炸好的四季豆、米酒、糖、醬油、泡蝦米的水。（若覺得有需要可另加適量的水）   

7.
炒至油亮上色後灑入蔥花即完成。
